Description
This course utilizes classrooms and teaching kitchens to teach students how to prepare healthy meals for themselves and how to teach their patients to prepare healthy meals for their use. Emphasis is placed on food preparation that is economical, healthfocused, flavorful, and culturally diverse. The course will utilize the expertise of medical doctors, osteopathic physicians, registered dieticians, and nutrition research scientists, including some from George Washington University who have collaborated and designed the Health Meets Food1 course that has been successfully implemented in 55 medical schools, residency programs, and nursing schools. With this foundation, students may choose to pursue a 60-credit hour certificate through George Washington University that would allow them to become a Certified Culinary Medicine Specialist (CCMS) that has further training in topics such as PKU, breastfeeding, pregnancy, diabetes, IBS, and celiac disease.
